A highly complex, aromatic and funky bouquet, with citrus notes, floral hints from the acacia wood, vanilla, toasty oak and a touch of smoke. The layers of wild ferment envelop this precise and dry wine which has an oak wreathed minerality and salty complexity to the tangy finish. A truly unique wine.
The carefully selected matured and qualitative Assyrtiko comes exclusively from the vineyard of Pyrgos, a fact that justifies its larger aromatic character, than that from other areas of the island.
After undergoing the 12-hour skin contact process at around 10οC, the grape must is placed in small 1.000 litre INOX tanks and in new 225lt French, American oak barrels and acacia barrels. The temperature is then allowed to rise naturally, without any further involvement. From that point on, modern technology passes the baton to traditional winemaking. The wild yeast strains that prevail are the ones which eventually determine the wine’s character.
The Ammonite symbol. The fossil of the Aegean Sea, whispering the ancient secrets of the Greek land, has travelled throughout the world carrying with it the name of Gaia Wines, along with Agiorgitiko and Assyrtiko. Gaia Wines was founded in 1994 by Yiannis Paraskevopoulos, Agriculturist from AUT and PhD in Enology from the University of Bordeaux III, and Leon Karatsalos Agriculturist from AUT. Both founders are examples of the Greek mindset of traveling and of gaining knowledge and experience, characteristics which are transformed into their wines, aiming to offer all wine lovers worldwide, the best possible result, each in their own unique way
