The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars. This cuvée is a blend of grapes sourced from selected chalk, marl and limestone plots among the Premiers Crus of the domaine located on the hill of Beaune. Vinification : whole bunch fermentation for approximately two weeks, the wines are then aged in our XVth century cellar for a period between 14 and 18 months. Moderate use of new oak
Founded in 1750, Domaine Chanson is based in Beaune, in the heart of the Burgundy region. Conceived under Louis XI and completed under François Ier, the medieval Bastion de l’Oratoire, at the heart of Domaine Chanson, is dedicated wholly to the ageing and safeguarding of wines from Chanson’s 43 hectares of vineyards. The four storey high structure, with 8m thick walls, provides an exceptional atmosphere for the maturation of fine Burgundian wines, maintaining a constant level of temperature and humidity and preserving the winemaking traditions of the Burgundy region. The Domaine was purchased by the Bollinger family in 1999 and their investments have significantly improved the quality and appreciation of the wines in recent years.
