Pale lemon in colour. Aromas of ripe apricot, peach and lemon zest burst out of the glass. On the palate, there is a rich texture from the lees ageing, a marked minerality and a vibrant acidity which carries the well-defined flavours onto the lingering finish.
The domaine has 4.8 hectares of Chardonnay planted across Pouilly-Fuissé and the surrounding villages. 'Aux Chailloux' is a prime vineyard site to the east of the village of Pouilly which was granted 1er Cru status in the 2020 classification of the Pouilly-Fuissé vineyards. The vineyard is gently sloping (6% gradient) with southerly exposure and is planted at a density of 10,000 vines per hectare. Soils are composed of clay and Jurassic limestone. The vines are around 60 years old and produce low yields of fruit packed full of flavour. The vineyards are farmed sustainably following both organic and biodynamic practices and the grapes are all harvested by hand.
Domaine du Roc des Boutires has been owned by the Parinet family of Château du Moulin-à-Vent since 2016. They have injected energy and dynamism into this domaine and are now making outstanding wines. Situated in the heart of the Pouilly-Fuissé appellation, the domaine takes its name both from its proximity to the excellent ‘Aux Bouthières’ vineyard and the famous ‘Roche de Solutré’, a limestone escarpment which overlooks the commune of Solutré-Pouilly
